Maple and Haitian Hot Sauce Glazed Chicken Wings
RevActionPartager
Sweet, spicy and perfectly sticky: these chicken wings bring together two flavours that were made for each other, Ontario maple syrup and Haitian hot sauce. Baked in the oven, they come out crispy without any deep frying, and they are perfect for game night, a get-together with friends or a Friday dinner.
Serves: 4 | Prep: 10 min | Cook: 45 min
Ingredients
For the wings
- 1.2 kg (about 2.5 lb) chicken wings, separated
- 1 tbsp baking powder (the secret to crispy skin)
- 1 tsp salt
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp black pepper
For the maple hot sauce glaze
- 80 ml (⅓ cup) pure maple syrup
- 1 to 2 tbsp Nenette's homemade hot sauce, to taste
- 2 tbsp butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
To serve
- Sliced green onions and sesame seeds
- Lime wedges
- A little pikliz (Haitian spicy pickled cabbage and carrots), if you have some
Method
- Preheat the oven to 220 °C (425 °F). Set a wire rack on a baking sheet lined with parchment paper.
- Pat the wings dry with paper towels. In a large bowl, toss them with the baking powder, salt, paprika, garlic powder and pepper.
- Bake for 40 to 45 minutes on the rack, flipping halfway through, until golden and the internal temperature reaches 74 °C (165 °F).
- Make the glaze while the wings bake: in a small saucepan, melt the butter, then add the maple syrup, hot sauce, soy sauce and lime juice. Simmer for 3 to 4 minutes, until slightly thickened.
- Toss the wings in the glaze in a large bowl, then return them to the oven for 5 minutes so the glaze caramelizes.
- Serve right away, sprinkled with green onions and sesame seeds, with lime wedges on the side.
Tips
- More or less heat: start with 1 tbsp of hot sauce, taste the glaze, then add more if you like.
- Air fryer version: 22 to 25 minutes at 200 °C (400 °F), shaking the basket halfway through.
- The glaze keeps for a week in the fridge, and it is also delicious on ribs, salmon or roasted vegetables.
Frequently asked questions
Can I use honey instead of maple syrup?
Yes, but maple syrup has a woodier, more caramelized flavour that balances the heat of the Haitian hot sauce better.
Are the wings very spicy?
With 1 tbsp of sauce, they have a nice kick without being fiery. The sweetness of the maple softens the heat.
